520			_aRésuméÀ travers la description du décor, de la clientèle et du fonctionnement d’un café bellevillois du 20e arrondissement appartenant depuis plus d’un demi-siècle à une famille aveyronnaise, l’article présente les caractéristiques d’un « bistrot parisien » situé hors des axes touristiques. Cet établissement qui fut un bougnat, avant de se transformer en snack, puis, sous l’impulsion de la deuxième génération, en café-restaurant axé sur les produits de l’Aubrac, a su s’adapter aux transformations de son environnement urbain.

Das Café hat sich dem Wandel seiner städtischen Umgebung angepasst und wurde von der Kohlenhandlung, über den Imbiss zu einem Bistrot mit Spezialitäten aus dem Aubrac, das nun schon in zweiter Generation betrieben wird.
