Il est pourtant incontestable que les produits laitiers composaient une part importante de l’alimentation des habitants de la péninsule italienne avant l’époque romaine. L’importance accordée au lait est d’ailleurs confirmée par l’existence d’une documentation iconographique qui prouve un attachement aux aspects symboliques liés à l’allaitement humain et animal. Ce sujet d’étude est donc prometteur : les sources existent, mais elles n’ont pas été systématiquement collectées. En l’absence de texte sur le sujet, il faut analyser un corpus constitué de témoignages iconographiques et archéologiques. Dans cet article, nous présentons un état des lieux des sources qui embrasse l’ensemble de la chaîne de production des produits laitiers, et qui s’intéresse aussi aux pratiques alimentaires. | ||

In the absence of a text on the subject, it is necessary to analyse a corpus constituted of iconographic and archaeological testimonies.
