RésuméÀ travers la description du décor, de la clientèle et du fonctionnement d’un café bellevillois du 20e arrondissement appartenant depuis plus d’un demi-siècle à une famille aveyronnaise, l’article présente les caractéristiques d’un « bistrot parisien » situé hors des axes touristiques. Cet établissement qui fut un bougnat, avant de se transformer en snack, puis, sous l’impulsion de la deuxième génération, en café-restaurant axé sur les produits de l’Aubrac, a su s’adapter aux transformations de son environnement urbain.

Portrait of a Parisian Bistrot : Le MistralDescribing the decoration, the patrons and the organization of a café in Belleville (20th arrondissement) owned by the same family from Aveyron for the last fifty years, the article shows the characteristics of a Parisian bistrot off the beaten tracks. Originally a bougnat before turning into a “snack bar” and finally, under the impulse of the second generation, this café is turned into a café-restaurant serving typical products from Aubrac : it has constantly adapted to the surrounding urban changes.

ZusammenfassungDas Mistral ist ein Pariser Bistrot fern der touristischen Hauptachsen : Dieser Artikel beschreibt seine Einrichtung, seine Kunden und das Alltagsleben des Cafés im Pariser Stadtteil Belleville, das seit mehr als einem halben Jahrhundert im Besitz einer Familie aus Aveyron ist. Das Café hat sich dem Wandel seiner städtischen Umgebung angepasst und wurde von der Kohlenhandlung, über den Imbiss zu einem Bistrot mit Spezialitäten aus dem Aubrac, das nun schon in zweiter Generation betrieben wird.
