The radical distinction between what is edible and what is toxic is a recent and artificial one. Ancient food practices make use of poison. Poison conceptions and perceptions are studied in this article together with the technical and symbolic processes aiming at transforming plants into food, at « civilizing » their nature. The relation between medicine and cooking, namely the importance of taste in the detection of toxicity is also considered.
