This paper looks at nineteen chefs' loss or handing back of their Michelin stars, by examining a media corpus comprising articles from the national or regional press between 1996 and 2019. Analyzing the discourse on this subject highlights the tensions that exist in the world of fine dining, while also questioning its methods of evaluation and communication. On a broader level, this study makes it possible to question the place and nature of fine dining criticism in an era of transparency.
