Il analyse à la fois la participation telle qu’elle est recommandée dans les politiques de santé publiques et telle qu’elle est concrétisée dans les établissements. Il montre comment la lutte contre la dénutrition rend difficile la compréhension du refus alimentaire comme un acte délibéré et participatif de la part des résidents. |
